Ingredients:

Brown Bread – 1 Loaf
Cashewnuts
Pistachio
Tutti Frutti
Silver Leaf ( Optional )

To Make Sugar Syrup

Suagr – 2 Cups ( 1 Cup – 250 Ml )
Water – 2 Cups
Drops Of Lemon Juice
Saffron

To Make Cream

Full Fat Milk – 1 Litre
Unsweetened Khoya – 100 Gms
Corn Flour Slurry

Method:

1. Take sugar and water in equal proportions in a saucepan and boil.
2. Add a few drops of lemon juice after the sugar is completely dissolved.
3. Mix well and boil the syrup for 10 mins on high flame.
4. Add saffron strands to the syrup after it becomes slightly thick.
5. Cool down the syrup until it is a little warm and transfer it to a bowl. Keep it aside.
6. Cut the edges off the bread slices and fry them in a pan with ghee/oil.
7. Fry the slices on a medium flame and remove the slices from the pan once they are golden brown in colour on both sides.
8. Dip the fried bread in the warm sugar syrup for about a min and arrange them evenly in an even bottomed bowl.
9. Pour milk in a saucepan and boil. Add khoya once the milk comes to a boil.
10. Mix 3 tbsp of corn flour and 1/4 cup of water for the corn flour slurry. Add this to the pan once the milk is a bit thickened.
11. Give it a quick mix and after this mixture becomes thick and creamy, pour it on the arranged bread slices to cover them completely.
12. Garnish the whole layer with chopped almonds, chopped pistachios and tutti fruitti.
13. Let this cool down completely and then refrigerate it for about 2-3 hours to set.
14. Take it out and decorate with silver leaf (this is optional). Cut it gently into small pieces.
15. Shahi Tukda is ready to be served.
