Ingredients
Raw Rice – 1 Cup
Urad Dal – 3/4 Cup
Salt – 1 Tsp
Green Chilli – 2 Nos
Onion – 1 No.
Curry Leaves

Method
The first step is to soak the rice and urad dal separately.
Take one cup of rice and ¾ th cup of urad dal and soak them
in separate bowls with water for about 4 hours.
Transfer the rice and urad dal to a mixer jar. Add a little water
and grind into a smooth, thick batter.
Transfer the batter to a large bowl. Let this batter ferment
overnight or for at least 12 hours.
To the fermented batter, add one tsp of salt, two finely
chopped green chillies, one finely chopped onion, a few finely
chopped curry leaves.
Mix everything well.
Heat enough oil for deep frying in a kadai.
Gently drop small balls of batter into the hot oil.
Once the punugulu are golden brown, remove them from the
oil and transfer them to a paper towel to absorb excess oil.
Place the punugulu on one side of the plate. Sprinkle some idli
powder on top. Add a handful of finely chopped onions on
one side and drizzle with fresh lemon juice.
Serve the hot punugulu with freshly ground coconut chutney
on the side.
