Aloo Paneer Kofta

Ingredients

Boiled Potato – 3 Nos (Large Size)
Grated Paneer – 200 Gms
Pounded Rock Salt – 3/4 Tsp
Chaat Masala – 1 Tsp
Garam Masala – 1/2 Tsp
Chili Powder – 1 Tsp
Corn Flour – 2 Tbsp
Milk Powder – 2 Tbsp
Coriander Leaves
Chopped Cashew Nuts
Raisins
Oil For Shallow Frying

Method:
1. In a bowl, add boiled potatoes and mash them well
2. Add grated paneer, spice powders, rock salt, coriander leaves and mix everything well
3. Take a small portion of the mixture and flatten it
4. Fill the centre with desired dry fruits and nuts
5. Seal the dry fruits and nuts and make patties
6. Heat some oil for shallow frying
7. Add the patties into the hot oil
8. Fry them till they are golden brown in color
9. Serve the Aloo Paneer Kofta hot with mint chutney.

Potato Fingers

ingredients –

Potatoes – 4 Nos
Water
Salt – 1 tsp
Pepper
Garlic Powder – 1/4 tsp
Onion Powder – 1/4 tsp
Chili Flakes – 1/2 tsp
Coriander leaves – chopped
Bread Crumbs
Corn Flour – 2 tsp
Dry Flour – Maida
Oil

Methods –

1. Take 4 potatoes, peel them and chop into big chunks
2. Heat a pot, add enough water to boil the potatoes
3. Add 1/4 tsp salt and the potatoes
4. Boil the potatoes till they are cooked completely
5. The potatoes are cooked perfectly
6. Strain them and add it to a bowl
7. Add 1/2 tsp of salt, pepper, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp of chili flakes, few coriander leaves and 2 tbsp of bread crumbs
8. Mix it once and mash the potatoes till they are soft and creamy
9. Apply some oil on your palms, take a small portion of the potato mixture and make finger-like shapes
10. Keep them aside
11. Refrigerate them for 15 mins
12. To coat the potato fingers, take some bread crumbs in a plate
13. In a bowl, add 2 tsps of cornflour and add enough water and mix well
14. Also, take some maida in a plate
15. Roll the potato fingers in the dry flour, dip it into the cornflour batter, and finally roll it in the bread crumbs and set aside
16. Refrigerate the potato fingers for 15 mins
17. Refrigerating helps the potato fingers to hold its shape better
18. Heat some oil for deep frying
19. Add the potato fingers to the hot oil
20. Deep fry them till they are golden brown in color
21. Keep the flame on medium-low while deep frying
22. The potato fingers are ready
23. Serve them hot

Aloo Tikki

Ingredients

Potato – 4 Nos
Green Chili – 2 Nos Chopped
Coriander Leaves
Kashmiri Chili Powder – 1/2 Tsp
Garam Masala – 1/2 Tsp
Salt – 1 Tsp
Juice Of 1/2 Lemon
Rice Flour – 1 Tbsp
Oil for shallow frying

Method:
1. Pressure cook the potatoes, remove the skin and place them in a bowl
2. Mash the potatoes, add green chilies, coriander leaves, red chili powder, garam masala powder, lemon juice, rice flour
3. Mix them well and make a smooth dough
4. Take a little bit of the masala and make patties
5 Place them in a plate and refrigerate them for 10 minutes
6. After 10 minutes, heat some oil for shallow frying
7. Add the patties to the oil and fry both the sides till they have a golden brown color
8.Serve the Aloo tikkis hot with mint chutney.
