Onion – 2 Nos Chopped
Green Chilli – 1 No.

Method:
Step 1: Making greens puree.
1. Clean and wash the methi and spinach leaves. Drain excess water.
2. To blanch the greens, pour some water in a pan.
3. Put the greens in the water and blanch them for 5 mins.
4. Strain the water and grind them into a puree.

Step 2: Frying paneer
5. Cut the paneer into large cubes and shallow fry them in little oil.
6. Fry them on both sides until golden brown and keep them aside.

Step 3: Making Methi Chaman
7. To a kadai, heat some mustard oil.
8. Add the whole spices, cinnamon, clove, cardamom, cumins seeds and onions. Saute them.
9. To this add green chillies and continue to saute them.
10. Once the onions changes color, add the ginger garlic paste and saute.
11. To this add turmeric powder, kashmiri chilli powder, coriander powder, dry ginger powder and salt and mix them.
12. Now add the greens puree along with some water. Mix everything.
13. Cover and cook for 10 mins.
14. Once the oil separates add garam masala and fennel powder and mix.
15. Now add the fried paneer pieces and fressh cream (optional)
16. Rich and creamy Methi Chaman is ready.

This can be served with chapati, naan, or even pulao. Definitely try this recipes and enjoy.
