Number of servings: 5-6 persons

Ingredients

For Masala Paste

Oil – 1 Tsp
Coriander seeds – 1 Tsp
Cumin Seeds – 2 Tsp
Peppercorn – 1 Tsp
Fennel Seeds – 1 Tsp
Red Chili – 10 Nos
Shallots – 12 Nos
Garlic – 8 Cloves
Ginger – 1 piece Chopped
Grated Coconut – 2 Tbsp
Water

For Mutton Curry

Mutton – 1 Kg
Gingelly Oil – 3 Tbsp
Cinamon, Cloves, Cardamom & Star Anise
Shallots – 20 Nos Sliced
Onion – 1 No. Finely Chopped
Green Chili – 2 Nos Sliced
Curry Leaves
Tomato – 4 Nos Finely Chopped
Turmeric Powder – 1/2 Tsp
Rock Salt – 1 Tbsp

Method
Heat a pan with some oil, add coriander seeds, cumin seeds, peppercorns, fennel seeds, red chilies and roast them
Add shallots, ginger, garlic and roast them along
Add grated coconut and roast it slightly
Cool the mixture completely
Transfer the cooled ingredients to a mixer and grind it to a fine paste
Heat a claypot with some oil, add the whole spices
Add sliced shallots, onions, green chilies and saute them till they are golden brown in color
Add curry leaves and tomatoes and saute
Add the turmeric powder, rock salt and saute till the tomatoes are mushy
Add the mutton pieces and cook for 5 mins
Add thr ground masala paste and cook for 2 mins
Add hot water and mix well
Close and cook the mutton for 45 mins to an hour
Finally, add some curry leaves and serve the mutton curry hot with idli, dosa, appa, idiyappam or steamed rice
