To make Milk bun
Maida – 1 cup ( 250 Ml)
Powdered sugar – 3/4 cup
Baking Soda – 1/2 tsp
Milk – 2 tbsp
Curd – 1/4 cup
Ghee – 1 tbsp
Water – 1/2 tbsp
To make sugar syrup
Sugar – 1/2 cup
Water – 1/4 cup
Oil for deep frying
METHOD:
1. Take maida, powdered sugar, baking soda in a large bowl and mix well.
2. Add milk, fresh curd and ghee.
3. Mix well and add water. Prepare the bun dough to the consistency shown in the video.
4. Rest the prepared dough for 10-15 mins.
5. For the sugar syrup, take sugar and water in a saucepan.
6. Boil the water until the sugar is fully dissolved.
7. Once the sugar syrup is slightly sticky, turn off the stove and keep the syrup aside.
8. For frying the buns, take a wide kadai and pour enough oil for deep frying. Heat it.
9. Apply some oil to the palms and once the oil in the kadai is hot, take little portions from the dough and gently drop into the kadai as small balls.
10. Keep the flame on medium, keep flipping and fry the balls until they are golden brown in colour on all sides.
11. Once they are all fried evenly on all sides, remove them from the kadai and place them in a bowl or plate. Let them cool down completely.
12. Drop the cooled down buns in the sugar syrup and coat them with the syrup once. They need not soak in the syrup, just the coating is enough.
13. Remove the buns from the sugar syrup and serve immediately.
14. These milk buns will stay good for 2-3 days in an air-tight container.
Pal Buns is a famous street food in Madurai, Tamil Nadu. This sweet has a rich taste because it involves milk. Pal buns can be very easily made at home with all the regular ingredients available with us most of the time. They also taste and look similar to donuts.
