To Make Kanda Poha

Poha – 2 Cups ( 1 Cup – 250 Ml )
Peanuts – 1/2 Cup
Oil – 1 Tbsp
Urad Dal – 1 Tsp
Mustard Seeds – 1 Tsp
Cumin Seeds – 1 Tsp
Red Chilli – 3 Nos
Onion – 2 Nos
Green Chilli – 4 Nos
Ginger
Turmeric Powder – 1/2 Tsp
Salt – 1 Tsp
Juice Of 1/2 Lemon
Curry Leaves
Coriander Leaves

METHOD:

1. Wash the poha thrice thoroughly in water and keep aside on a strainer to make sure the extra water is strained off.
2. Take a pan, add oil and roast the peanuts until golden brown. Keep them aside.
3. Take a wide pan and add oil. Heat it.
4. Add urad dal, mustard seeds and cumin seeds.
5. Once the mustard seeds start splattering, add cut up red chillies and saute.
6. Add onions, green chillies and saute for a few seconds. Add ginger, turmeric powder, salt and saute for a few more seconds.
7. Add the poha to the pan and mix everything well. Check for seasoning and add salt if required.
8. Add the roasted peanuts and curry leaves. Give it all a quick mix.
9. Add the lemon juice, turn off the heat and mix well.
10. Lastly add some finely chopped coriander leaves and mix well. Garnish with roasted peanuts, finely chopped coriander leaves, sev and grated coconut.
11. Tasty Kanda Poha is ready to be served hot and nice.

Kanda Poha is a popular Maharashtrian dish that is enjoyed as tiffin for breakfast or evening snacks. It is made with flattened rice and onions. Kanda in marathi means onions and hence this dish derived the name. This is a very filling dish that can be easily made with a few tempering ingredients, seasoning and basic condiments. This is a no onion, no garlic dish that can be made and enjoyed during festivals or vrats. You can prepare this poha in just under 15 minutes and this is one of the healthy dishes you can make really quickly. This stays good for a while when packed for lunch boxes too.
