Ingredients
Country Chicken
Oil – 3 Tbsp
Mustard Seeds – 1/2 Tsp
Green Chilli – 2 Nos
Chopped Onion & Shallots
Curry Leaves
Ginger Garlic Paste
Tomato – 3 Nos
Turmeric Powder – 1/2 Tsp
Rock Salt – 2 Tsp
Water – 2 Bowls
Chilli Powder – 1 Tsp
Curry Masala – 1 Tsp
Chopped Coriander Leaves
To Make Masala Paste
Coriander Seeds
Pepper
Cumin Seeds
Fennel Seeds
Cinnamon
Clove
Coconut
Red Chilli
Method:
1) Cut the chicken into pieces add turmeric powder mix and wash it a few times.
2) To a large Kadai add about 4 table spoons of oil
once the oil is hot add a few mustard seeds ,4 green chillies and then add 4 large chopped onions and a few shallots and saute for a few mins
3) Next add a few curry leaves and mix well. now add about 2 tbsp of freshly ground ginger and garlic paste and saute for a few mins
4) Next add 3 large tomatoes chopped and contine to cook.
5) Now add 1/2 tsp turmeric powder then add all the chicken pieces and mix everything.
6) After about 5 mins add 2 large tsp of rock salt and mix.
7) Now add 2 large bowls of water mix then add 2 tsp of red chilli powder and 2 tsp of curry masala powder mix everything close the kadai and cook for 15 mins.
8) To make the masala paste take some pepper, jeera ( cumin ) fennel, cinnamon, cloves, coconut and red chilies.
9) Dilute the masala paste with a little water and add it into the kadai.mix well and cook fr about 5 mins min.
10) After 5 mins check the curry. Add a few chopped coriander leaves mix well .
11) Country chicken curry is done serve with hot steaming rice.
