Egg Parotta
Ingredients
To Make Dough

Curd – 2 Tsp

Water
To Make Egg Mixture
Egg – 5 Nos
Onion – 2 Nos Finely Chopped
Green Chilli – 3 Nos Finely Chopped
Chopped Coriander Leaves
Salt – 1 Tsp (Buy: https://amzn.to/2vg124l)
Turmeric Powder – 1/4 Tsp (Buy: https://amzn.to/2RC4fm4)
Chilli Powder – 1 Tsp (Buy: https://amzn.to/3b4yHyg)
Pepper (Buy: https://amzn.to/2RElrrg)
Method:
Step 1: To make the Parotta dough.
1. To a wide bowl, add wheat flour, salt, sugar, curd, oil and mix well.
2. Graduallly add water and knead the dough.
3. Knead the dough until you get a smooth and soft.
4. Rub oil over the dough ball and keep it aside for 30 mins.
Step 2: To make the egg mixture.
5. Crack open eggs in a bowl.
6. To this add onion, green chilli and coriander leaves
7. Season the eggs with salt, turmeric powder, chilli powder, freshly crushed pepper and whisk everything.
Step 3: To make the Egg Parotta
8. Divide the dough ball into equal portions.
9. Roll out a small dough ball, nice and thin.
10. Rub some oil over the flattened dough and start folding it.
11. Now roll it inward and now the parotta roll is ready.
12. Repeat the step to roll out the other dough balls.
13. Now very slightly roll out a dough ball carefully.
14. Heat a tawa and roast the parotta on both sides.
15. Once you see brown spots, add some oil and toast it.
16. Heat an iron pan, add some oil, pour a small quantity of the egg mixture and spread it.
17. Place the cooked parotta over the egg mixture.
18. Remove it once the egg is cooked.
19. Now add some oil, pour egg mixture and place the other side of the parotta.
20. Remove the parotta once the egg is cooked.
21. Egg Parotta is ready to be served.
21. You can serve it with some pickle or as it is.
Mughlai Egg Paratha

Finely Chopped Ginger
Chopped Coriander Leaves

Method:
To make the dough
1. To a bowl, add maida, wheat flour, salt and mix it.
2. Add oil and mix again before adding water.
3. Gradually add water and mix the dough.
4. Knead the dough for 10 mins until the dough is soft.
5. Rub some oil on the dough and let is sit for an hour.
To make the egg mixture.
6. To a bowl, add onion, green chilli, ginger, coriander leaves, salt, chilli powder, chaat masala, pepper, garam masala and mix everything.
7. To this add the egg and mix them well.
To make the Mughlai Egg Paratha
8. Divide the dough into equal portions. Heat some oil in the pan for shallow frying.
9. Roll out the dough nice and thin.
10. Pour a egg mixture in the center and fold the dough. Make sure the egg mixture is sealed properly.
11. Once the paratha is made, place it in the hot oil and fry it.
12. Once the paratha is golden brown on both sides, remove it and serve it hot.
13. Mughlai egg paratha is ready.
