To Make Masala Powder & Paste

Coriander Seeds – 2 Tbsp
Peppercorns – 1 Tsp
Cumin Seeds – 1 Tsp
Red Chilli – 5 Nos
Ginger
Garlic – 4 Cloves
Water

To Make Guntur Chicken Masala

Chicken – 500 Gms
Turmeric Powder – 1/4 Tsp
Salt – 1 1/2 Tsp
Kashmiri Chilli Powder – 1 Tsp
Masala Paste
Oil – 3 Tbsp
Mustard Seeds – 1 Tsp
Cumin Seeds – 1 Tsp
Onion – 2 Nos
Green Chilli – 2 Nos
Tomato – 2 Nos
Prepared Masala Powder
Curry Leaves
Water – 1/2 Cup
Coriander Leaves

Method

Dry roast 2 tsp coriander seeds, 1 tsp peppercorns, 1 tsp cumin seeds, and 5-6 dried red chilies on low heat for 3-4 minutes until aromatic. Let them cool, then grind into a fine powder. Set aside 2 tsp of this powder. To the remaining 1½ tsp, add a small piece of chopped ginger and 3-4 garlic cloves. Blend into a smooth paste with a little water.

Take 500g of chicken and marinate with ¼ tsp turmeric powder, 1 tsp salt, 1 tsp Kashmiri chili powder, and the prepared masala paste. Let it rest for 30 minutes.

Heat 3 tbsp oil in a pan. Add 1 tsp mustard seeds and 1 tsp cumin seeds. Once they splutter, sauté 2 chopped onions and 2 slit green chilies for 2-3 minutes.

Add the marinated chicken, stir, and cook for a few minutes. Then, add 2 chopped tomatoes, sauté for 2 minutes, and mix in 1 tsp masala powder with fresh curry leaves. Pour ½ cup water, add ½ tsp salt, cover, and cook for 15 minutes.

Once the chicken is tender, sprinkle the remaining masala powder, add chopped coriander leaves, and mix well.
