To Make Garlic Pickle

Whole Garlic – 6 Nos
Mustard Seeds – 3 Tsp
Fenugreek Seeds – 1 1/2 Tsp
Gingelly Oil – 1/2 Cup
Tamarind Puree – 1/2 Cup
Turmeric Powder – 1/2 Tsp
Salt – 2 Tsp
Red Chilli Powder – 4 Tbsp
Powdered Jaggery – 1 Tsp

Method:

1. Peel off the garlic cloves’ skin and keep them aside.
2. To a pan, add mustard seeds and fenugreek seeds. Dry roast them for 2 mins and keep them aside. Once they are completely cooled down, put them in a mixer jar and grind them into a fine powder. Keep it aside.
3. Take gingelly oil in a wide pan and and heat it lightly. Add garlic cloves to it.
4. Fry them until they turn golden in colour and keep them aside.
5. Keep a few aside from the fried garlic and grind the rest into a fine paste.
6. Soak tamarind in hot water for 10-15 mins and extract the juice.
7. Add a little more mustard oil to the pan and add mustard seeds to it.
8. Add curry leaves and garlic paste to the pan.
9. Mix it all well and add turmeric powder, salt, red chilli powder.
10. Give it a quick mix and add tamarind puree. Mix and cook for 3 mins.
11. Then add the ground mustard and fenugreek powder. Mix it all well.
12. Add the roasted garlic cloves and mix them along with the red chilli mixture. Mix well on a medium low flame.
13. Add in the powdered jaggery and mix it all well. Cook for 15 mins.
14. Once the oil separates after 15-20 mins, cool down the pickle completely and then bottle it.
15. That’s it, flavourful garlic pickle is ready to be served as and when you like.

This garlic pickle is a wonderful Indian style pickle made with red chillies and a few other condiments. It is spicy and also rich in garlic flavor. You can store this pickle upto 1 month and enjoy it with rice, curd rice or as a side dish to rotis/chapatis/parathas too. Garlic is a wonderful condiment which provides various health benefits. It can also be a quick fix when you don’t have time to make chutneys for your tiffins.
