Hyderabadi Egg Dum Biryani
Ingredients:
Eggs – 6 nos (boiled)
For Frying Onions:
Onions – 4 nos
Oil – 1 Tbsp
Half Cooking the Rice:
Long Grain Rice – 200 gms
Few Cinnamon, Bay Leaf, Cardamom, Cloves, Peppercorns, Star Anise
Salt.
Ghee – 1 Tbsp
Mix of Bay Leaf, Cinnamon, Cloves, Star anise, Cardamom Pods
Green Chillis – 2 to 3 nos
Ginger Garlic Paste – 1 tsp
Turmeric powder – 1/2 tsp
Red chilli powder – 1 tsp
Biryani masala powder – 1 1/2 tsp
Yogurt / Curd – 1 cup
Salt
Few Mint Leaves
Saffron – Few Strands
Milk – 2 Tbsp
Coriander Leaves
wheat dough to seal
Method:
Step 1:
Prepare boiled eggs and keep aside
step 2:
Shallow fry onions to caramel brown and keep aside
step 3:
Half cook the rice (soaked for 30 minutes) in boiling water with cinnamon, bay leaf, cardamom, cloves, pepper corns, star anise and salt. Strain and keep aside.
step 4: Making the dum biryani
1. To a vessel add the ghee, Bay leaf, Cinnamon, Cloves, Star anise, Cardamom pods,
2. Add the Green Chilis, Ginger Garlic paste, Turmeric powder & Red chilli powder
3. Now add the biryani masala powder and the half of fried onions
4. Add fresh Yogurt/Curd, Salt & Mint leaves and mix well
5. Add the Boiled Eggs (Make small slits). Its time to remove from the flame
6. Place a tawa on the flame and gently place the gravy vessel on the tawa
7. Layer the half cooked rice. make sure it covers the eggs
8. Add the saffron milk, coriander leaves & fresh mint leaves
9. Add the remaining fried onions and close & seal the lid with dough
10. Dum cook for 15 to 20 minutes
Roasted Egg Masala
Ingredients:
Oil
Whole Spices (Cinnamon, Clove, Cardamom)
Fennel & Cumin seeds
Grated Onion – 3 no.
Green Chilli – 2 no.
Ginger Garlic paste – 1 Tsp
Grated Tomato – 4 no
Chilli powder – 2 Tsp
Cumin powder – 1 Tsp
Coriander powder – 1 Tsp
Garam Masala powder – 1/2 Tsp
Salt to taste
Water
Sugar – 3/4 Tsp
For Roasting Eggs:
Oil
Turmeric powder – 1/4 Tsp
Chilli powder – 1 Tsp
Salt to taste
Boiled Egg – 5 no
Method:
1. Take a saucepan, add little oil, 1/4 tsp turmeric powder, 1 tsp chilli powder and 1/2 tsp salt.
2. Make some slits on the boiled eggs.
3. Place the eggs in the pan and toss them. Let the masala coat the eggs completely, roast them for 2 minutes and keep it aside.
4. In the same saucepan, add little oil.
5. Add all spices – cinnamon, cloves, cardamom, fennel and cumin seeds.
6. Add 3 grated onions, 2 slit green chilli and saute well.
7. Once the onion turns brown, add ginger garlic paste and mix it.
8. Add 4 grated tomatoes and saute well.
9. Add spices powder – 2 tsp chilli powder, 1 tsp cumin powder, 1 tsp coriander powder, 1/2 tsp garam masala, salt and mix them all together.
10. Add little water and cook the masala till the oil separates.
11. Add 3/4 tsp sugar to balance the flavours.
12. Gently add roasted eggs to the masala and mix them.
The most delicious and easy roasted egg masala is ready!
Special Egg Noodles
Ingredients
Oil
Chopped Onions
Chopped Garlic
Chopped Ginger
Chopped Green Chili
Chopped Capsicum (optional)
Chopped Tomatoes
Salt to taste
Turmeric powder – 1/4 Tsp
Chili powder – 1/2 Tsp
Pepper powder – 1/4 Tsp
Chopped Coriander leaves
For Omelette
Egg – 2 nos
Oil
Salt to taste
Pepper powder
Chili powder
Method:
1. Heat oil in a pan. Break and beat the eggs.
2. Pour the egg mixture into the pan add salt, pepper powder, chili powder and cook it.
3. Egg omelette is ready. Now cut into thin strips like noodles. Keep aside.
4. In the same pan heat oil. Add chopped onions, chopped garlic, chopped ginger, chopped green chili, chopped capsicum (optional) and chopped tomatoes.
5. Saute the onion till it turns transparent.
6. Then add salt, turmeric powder, chili powder, pepper powder and saute till vegetables become dry.
7. Garnish it with chopped coriander leaves.
8. Serve hot for breakfast or snacks.
