Dondakaya Vepudu (Ivy Gourd Stir Fry)
Ingredients
Oil – 2 Tbsp
Urad Dal – 1 Tsp
Mustard Seeds – 1 Tsp
Cumin Seeds – 1 Tsp
Red Chili – 2 Nos
Asafoetida Powder – 1/2 Tsp
Curry Leaves
Dondakaya – 250 Gms
Salt – 1 Tsp
Turmeric Powder – 1/4 Tsp
Chili Powder – 2 Tsp
Coriander Powder – 1/2 Tsp
Peanut – 1/4 Cup
To Make Masala Powder
Coconut – 1/4 Cup Grated
Red Chili – 6 Nos
Garlic – 5 Cloves
Roasted Chana Dal – 2 Tbsp

Method
Roast grated coconut and red chilies
Cool them and add them to a mixer jar, add garlic cloves, roasted chana dal
Grind them together to a get a powder
Heat a pan with some oil, add urad dal, mustard seeds, asafoetida powder, and let the mustard seeds crackle
Add red chilies and curry leaves
Add chopped ivy gourd pieces
Add salt and roast the ivy gourd pieces till they get crispy and golden brown
Add turmeric powder, chili powder, and the ground masala powder
Saute the vegetable with the masala powder for about 5 minutes
In another pan, roast some peanuts with some chili powder and salt and add it to the ivy gourd pieces
The roasted peanuts give a good crunch
Serve the Dondakaya Vepudu with sambar or rasam or with mor khuzhambu
