Ingredients
Maida (All purpose flour) – 1 cup
Curd/Yogurt – 2 tbsp
Ghee – 2 tbsp
A pinch of Baking Soda
Oil for Frying
For Sugar syrup
Sugar – 1 cup
Water – 1 cup
A pinch of Cardamom powder
Method:
1. First step, In a bowl add Curd/Yogurt, Ghee, Baking Soda & whisk it together.
2. In a wide bowl add Maida (All purpose flour) & gradually add the Curd/Yogurt mixture. Knead into a dough.
3. Let the dough sit it for a 10 minutes.
4. Now we will make Sugar syrup, Pour Water, add Sugar & dissolve it.
5. Boil in medium/low flame till you get a thin syrup consistency.
6. Turn off the stove & add pinch of Cardamom powder for flavouring.
7. After 10 minutes take a little dough & roll it flat like patties. You can also fold it in to get even textures for the Badusha.
8. Heat Oil in a Kadai for deep frying, once the oil is hot enough, gently drop the Badusha in it.
9. Keep the flame in medium/low for them to cook through.
10. Once it turns in to nice brown colour, take it out & let them sit for 2 to 3 minutes.
11. Then put them in to the sugar syrup. Let it soak for an overnight.
12. Garnish it with mixed nuts & enjoy your Badusha this Diwali.
