American Chop Suey

Ingredients

For the Chop Suey
1 tsp ginger
1 tsp garlic
cabbage 1/2 cup
1 small carrot
1 medium sliced onion
green capsicum 1/2 no.
1/4 cup tomato ketchup
2 tsp vinegar
2 tsp soy sauce
2 tsp red chili sauce
1 tsp pepper
3 cups water
1 tsp sugar
2 tbsp cornflour
Salt to taste
1 tbsp oil

For fried noodles
200 gms noodles
2 tbsp cornflour
Water
Oil
Salt to taste

Method:
1. In a pot boil some water and add noodles and salt
2. Once done, strain off the water
3. Add some cold water and rinse the noodles
4. And add oil to the noodles
5. Add cornflour to the noodles and toss it
6. Heat some oil for deep frying, when the oil heats up add the noodles and fry them till they are crispy and golden
7. Keep them aside
8. Heat some oil in a pan, add garlic, ginger, onion, and saute
9. Add capsicum, carrots, cabbage, and stir fry them
10. Add salt, pepper, vinegar, soya sauce, red chili sauce, tomato ketchup and mix well
11. Add water and mix well
12. Make a slurry with cornflour and water and add it into the chop suey
13. Bring it to a boil and add spring onions greens
14. Serve the Chop Suey along with the fried noodles and serve it hot.

Chili Garlic Noodles

Ingredients

Hakka Noodles – 300 Gms
Sesame Oil – 2 Tbsp
Garlic
Onion – 1 No. Thinly Sliced
Green Chili – 1 No.
Carrot – 1 N0.
Cabbage – 1 Bowl
Yellow Bell Pepper – 1/2 No.
Red Bell Pepper – 1/2 No.
Green Capsicum – 1/2 No.
Spring Onion Whites
Vinegar – 2 Tsp
Soy Sauce – 2 Tbsp
Red Chili Sauce – 1 Tbsp
Green Chili Sauce – 1 Tbsp
Pepper – 1 Tsp
Spring Onion Greens
Water
Salt

Method
1. For the noodles to cook – take a pan, add enough water, add some salt as required and now add 300 gms of hakka noodles.
2. Once its 90% cooked take it off the flame and strain it, add some oil so that it won’t stick to each other.
3. Take a pan, add 2 TBSP of sesame oil, some finely chopped garlic, 1 thinly sliced onion and 1 green chili finely chopped.
4. Now start off with adding some veggies like 1 medium sized carrot (julienne cut), 1 bowl of shredded cabbage, ½ thinly sliced yellow red and green bell pepper, some spring onions(whites).
5. Then add 2 TSP of vinegar, 2 TBSP of soy sauce, 1 TBSP of red chili sauce, 1 TBSP of green chili sauce and 1 TSP pepper powder.
6. Finally, add the cooked noodles and toss it all together.
7. Garnish it with some spring onions (greens).
8. Serve it hot.

VEGETABLE NOODLES

Ingredients:
For cooking noodles
Water
Salt
Noodles – 200 grams
Little Oil

For vegetable noodles
Sesame oil – 2 Tbsp.
Few sliced Garlic
Few sliced Ginger
Green chili – 2 no.’s sliced
Onion – 1 no.
Carrot (thinly sliced)
Green beans (sliced)
Cabbage (shredded)
Red, Green & Yellow bell peppers
Spring Onion whites
Salt
Pepper – 1 Tsp.
Soy sauce – 2 Tsp.
Vinegar – 2 Tsp.
Chili sauce – 3 Tsp.
Cooked Noodles
Spring Onion Greens

Preparation:

1. Take a large pot and pour enough water on it and placing it on the stove, bring the water to a boil.
2. Add a little salt (app. ½ or 1 tsp. – as per your preference) and a packet of noodles (app. 200 grams) to the pot.
3. Once the noodles are soft and completely cooked, strain it. Drizzle a little oil on it to avoid them sticking together and keep it aside.

Method:
1. Take a wok or a wide sauce pan and pour a little sesame oil in it.
2. Add a few cloves of garlic that have been thinly sliced, a piece of ginger thinly sliced, 2 green chillies thinly sliced and an onion thinly sliced.
3. Sauté for a few minutes. Now add the vegetables, i.e., carrots, green beans and cabbage. Sauté them for about two minutes.
4. Now, add the thinly cut up bell peppers and mix well.
5. Add the spring onion whites and give it a quick stir.
6. Now, add the seasoning to the vegetables, i.e., add salt, pepper, soya sauce, vinegar and chilli sauce. Mix all these together so that the vegetables are evenly seasoned.
7. Finally, add the cooked noodles to the pan and mix them well until all the spices, vegetables and noodles blend together well.
8. Garnish with some chopped spring onion greens. Your Vegetable Noodles are now ready to be served!
