Ingredients

Potato – 3 Nos
Maida / All Purpose Flour – 1/2 Cup
Corn Flour – 2 Tbsp
Chilli Powder – 1 Tsp
Kashmiri Red Chilli Powder – 1/4 Tsp
Pepper – 1/2 Tsp
Salt – 1/2 Tsp
Chopped Garlic
Chilli Flakes – 1 Tsp
Oregano – 1 Tsp
Butter
Oil For Deep Frying

Method:

1. Wash the potatoes, peel the skin, cut them into wedges and drop them in a bowl of water.
2. Add enough water to a pot for boiling the potatoes.
3. Add salt and potato pieces to the pot. Boil them until they are 3/4th cooked. Strain and keep them aside.
4. To a bowl, add maida, corn flour, salt, chili powder, pepper powder, Kashmiri red chili powder and mix everything well.
5. Coat the cooked potatoes with flour mixture and keep them aside.
6. Add water to the remaining flour and make it into a medium consistency batter.
7. To a wide pan, add oil for deep frying and heat it.
8. Dip the dusted potato pieces in the batter and coat them evenly on all sides.
9. Drop them into the hot oil one by one.
10. Fry them until they turn golden brown in colour on medium flame.
11. Remove the fried wedges from the pan and keep them aside.
12. To another pan, add butter, chopped garlic, chili flakes, oregano and mix well.
13. Saute the seasoning mix until the garlic turns light brown in colour.
14. This takes about 2-3 mins on medium low flame.
15. To this, add the fried potato wedges and give it all a quick mix.
16. Toss the wedges, add salt, chilli powder and toss them again.
17. Spicy Potato Wedges are ready to be served with mayo dip or ketchup by the side.
