Ingredients:
To Make Cream Cheese
Milk – 2 Litre
Juice Of 2 Lemon
Water
Salt
To Make Cream Cheese Frosting
Unsalted Butter – 150 Gms
Cream Cheese – 200 Gms
Icing Sugar – 3 Cups ( 375 Gms )
Method:
For CREAM CHEESE
1. Pour full-fat milk in a saucepan and boil.
2. Add lemon juice to it and let it curdle fully until the whey water appears transparent. (add extra lemon juice if required to complete the process)
3. Strain the curdled milk solids (chena) into a muslin cloth through a sieve beneath it to separate the whey water.
4. Pour some fresh water on the chena to remove any remaining lemon flavour.
5. Squeeze the muslin cloth fully to drain the water.
6. Let the chena sit aside for about 2 hours.
7. Make the dried chena into small pieces and transfer it to a mixer jar or a food processor.
8. Add salt and blend until it becomes smooth and creamy.
9. Transfer this soft cream cheese to an air-tight container and refrigerate for storing. Use whenever needed.
10. Apply some fresh cream cheese on one of of a bagel, cover it with the other half and enjoy.
For CREAM CHEESE FROSTING
1. Take some softened, unsalted butter in a bowl and beat it until it is soft and creamy.
2. Add cream cheese and blend until it is all well combined.
3. To this mixture, add icing sugar in batches gradually and beat it. (icing sugar can be replaced with granulated sugar or its powder)
4. Scrape off the sides to make sure all the ingredients blend in well.
5. Keep beating the mixture after each addition of icing sugar until it becomes soft and fluffy.
6. Your well combined cream cheese frosting is ready to use on your favourite cakes and cup-cakes.
