Coriander Rice
Ingredients
Ghee – 2 to 3 tbsp
Cooked Rice
Onion – 2 thinly sliced
Bay leaf – 1
Cinnamon – 1
Clove – 2
Cardamom – 3
Salt to taste
Garam Masala powder – 1/2 tsp
For Masala Paste
Green chilli – 3
A piece of Ginger
Garlic – 5 to 6 cloves
Shallots – 3 to 4
Grated Coconut – 1/2 cup
Coriander leaves – 1 bunch
Method:
1. First step to make masala paste. In a blender add Green chilli, Ginger, Garlic, Shallots, Grated Coconut, Coriander leaves & add a little Water to grind it into a fine paste.
2. Heat Ghee in a wide pan. Add Bay leaf, Cinnamon, Cloves, Cardamom, Onion & sauté it till it turns brown colour.
3. Then add the grounded Masala paste & mix well till the raw smell goes off.
4. Halfway through add Salt, Garam Masala powder & mix well.
5. Once the raw smell goes off Add the Cooked Rice little at a time & gently mix it.
6. Serve hot with Onion Raita.
