Clay Pot Chicken Biryani
Ingredients

Ghee – 3 Tbsp
Whole Spices (Cinnamon, Clove, Cardamom pods & Bay leaf)
Onion – 5 nos thinly sliced
Green chili – 2 nos
Tomato – 2 nos chopped
Coriander leaves
Mint leaves
Salt to taste
Basmati Rice – 400 ml

For Marination
Chicken – 1 kg
Turmeric powder – 1 Tsp
Chili powder – 3 to 4 Tsp
Coriander powder – 2 Tsp
Garam Masala powder – 1 Tsp
Salt to taste
Ginger paste – 2 Tsp
Garlic paste – 2 Tsp
Curd – 1 cup

Method

Take the chicken in a bowl, add turmeric powder, chili powder, coriander powder, garam masala, salt, ginger paste, garlic paste, curd and mix everything well
Marinate it for about 2 hours
Heat a clay pot and add some oil, add the whole spices and roast them
Add onions and green chilies and saute till they are brown
Add chopped tomatoes and saute them
Add the chicken pieces and mix well
After 5 mins, add coriander leaves and mint leaves and mix well
Close and cook for 15 mins
Check for seasoning and salt accordingly and mix well
Add the 3/4th cooked rice into the clay pot. (Soak and cook the rice with whole spices till it is 3/4 th done)
Spread the rice evenly
Add ghee and seal the clay pot with an aluminium foil paper and place a lid on top and cook it for about 30 mins
After about 30 mins turn off the stove and mix the briyani and serve the briyani hot with onion raita
