Ingredients
To Make the Masala Paste
Oil – 1 Tsp
Cinnamon
Star Anise
Cardamom
Cloves
Cumin Seeds – 1 Tsp
Fennel Seeds – 1 Tsp
Peppercorns – 1 Tsp
Coriander Seeds – 2 Tsp
Red Chili – 5 Nos
Garlic
Ginger
Grated Coconut – 1/4 Cup
Water
To Roast the Eggs
Oil -1 Tsp
Turmeric Powder -1/4 Tsp
Salt – 1/2 Tsp
Chili Powder – 1 Tsp
Boiled Eggs – 5 Nos
To Make Chettinad Egg Curry
Roasted Eggs – 5 Nos
Gingelly Oil – 3 Tbsp
Onion – 3 Nos Finely Chopped
Few Curry Leaves
Tomatoes – 3 Nos Finely Chopped
Rock Salt – 1 1/2 Tsp
Ground Masala Paste
Water – 2 Cups
Method
Heat a pan with some oil
Add turmeric powder, chili powder, salt and mix it well
Make slits on the hard boiled eggs and add it to the pan
Roast the eggs and keep it aside
Heat a pan with some oil
Add the ingredients for the masala paste and roast them
Cool them and grind them to a fine paste
Heat a pan with some oil, add onions, curry leaves and saute them till they are golden
Add the tomatoes and saute
Add salt and the ground masala paste
Saute for 5 mins
Add water and mix well
Let it boil for 5 mins
Add eggs and mix well
Close and boil it for 5 mins
Serve the Chettinad Egg Curry hot with some rice
