Andhra Brinjal Curry – Recipe
Ingredients: Brinjal / Eggplant – 8 nos
Oil – 2 Tbsp
Mustard seeds, Cumin seeds & Urad dal – 1 tsp
Red chillies – 2 + 5nos
Onion – 1 nos chopped
Few curry leaves
Green chillies – 3 nos
Asafoetida powder – 1/2 tsp
Tomatoes – 2 nos chopped
Garlic – 5 crushed
Ginger – 1 small piece crushed
Turmeric – 1/4 tsp
Few Mint leaves
Few coriander leaves
salt
Chilli powder – 1 tsp
Dry coconut powder – 1 Tbsp
Method:
1. Heat oil in a pan
2. Add the tempering ingredients (Mustard seeds, Cumin seeds & Urad dal)
3. Add 2 red chillies, onion, curry leaves, green chillies and asafoetida powder and saute till it becomes transparent
4. Add the tomatoes, crushed ginger & garlic, turmeric powder and mint leaves. Saute till the tomato becomes soft
5. Add the brinjal and mix well
6. Add salt and chilli powder and mix well again
7. Close the lid and cook in low flame for 5 minutes
8. Grind dry coconut powder and 5 red chillies
9. Add the dry chilli coconut powder to the brinjal mix
10. Garnish with coriander leaves and mix. Done!
