Method

Take four big size Amla’s that is goose berries. Grate this amla’s in a grater…
Cook the raw rice and keep it aside. Lets temper and prepare the amla rice now.
To a wide pan, add one tbsp of gingelly oil, once the oil is hot, add one tbsp of chana dal, one and half tsp urad dal, one tsp mustard seeds, one tsp cumin seeds, two red chilies cut into half, and roast them.
Add some roasted peanuts. Add quarter tsp of asafoetida, two green chillies finely chopped, One piece of ginger finely chopped and saute it.
Add half tsp of turmeric powder, one tsp salt and mix it all in. Now add the grated amla’s.
Lets saute the grated amla for 2-3 minutes. Add the fresh curry leaves to it and mix.
After 3 minutes, you can add the rice. Check for seasoning and add salt if required and mix again.
Simple and tasty Amla rice is ready to be served with some nice potato fry or with papad or vadams.
