Aloo Tikki

Ingredients

Potato – 4 Nos
Green Chili – 2 Nos Chopped
Coriander Leaves
Kashmiri Chili Powder – 1/2 Tsp
Garam Masala – 1/2 Tsp
Salt – 1 Tsp
Juice Of 1/2 Lemon
Rice Flour – 1 Tbsp
Oil for shallow frying

Method:
1. Pressure cook the potatoes, remove the skin and place them in a bowl
2. Mash the potatoes, add green chilies, coriander leaves, red chili powder, garam masala powder, lemon juice, rice flour
3. Mix them well and make a smooth dough
4. Take a little bit of the masala and make patties
5 Place them in a plate and refrigerate them for 10 minutes
6. After 10 minutes, heat some oil for shallow frying
7. Add the patties to the oil and fry both the sides till they have a golden brown color
8.Serve the Aloo tikkis hot with mint chutney.

Achari Aloo Roast

Ingredients

Potato- 6 nos
Water
Mustard Oil – 2 Tbsp
Cumin seeds – 1 Tsp
Fenugreek – 1/4 Tsp
Hing/Asafoetida powder
Salt to taste
Turmeric powder
Chili powder
Kalonji seeds – 1/2 Tsp
Garam Masala – 1/2 Tsp
Amchur powder
Pickle – 2 Tbsp

Method

Pressure cook the potato for about 4 whistles
Peel the potatoes and slice them and keep it aside
Heat a pan with some oil, add cumin seeds, fenugreek seeds, asafoetida powder and roast them
Add the potatoes and roast them
Add salt, turmeric powder, red chili powder, kalonji powder, garam masala powder, amchur powder and mix them well
Add pickle gravy and mix it
Roast the potatoes well
Serve the Achari Aloo Roast hot with rice or roti

Potato chips
Ingredients

Potato – 4 nos
Water
Paper towel/Dry cloth (Buy :https://goo.gl/BM2yNy )
Oil for frying
Salt
Chili powder

Method:
1. Peel the potato skin completely.
2. Slice the potato with a thin slicer (Buy : https://goo.gl/ORaUQS ). Potato slice should be very thin.
3. Place the potato slices in water to clean and remove the extra starch.
4. Again wash the potatoes with clean water.
5. Place the potato slices on a paper towel or a dry cloth to remove the moisture from the potatoes.
6. Keep dry cloth or paper towel on top of the potatoes to remove the extra moisture. Before frying make sure dry the potato slice completely.

8. Once the sizzling/bubbling sound stops & oil is clear that’s the indication of chips are ready.
9. Add salt and chili powder. Toss the chips gently to mix well
