INGREDIENTS:
For Pumpkin Peel Chutney/ Kaddu ke Chaal ki Chutney: (1 cup = 200 ml)
1 cup Pumpkin peels/ Kaddu ki Chaal
1 tbsp Oil/ Tel
1 tsp split Chickpeas/ Chana Dal
1/2 tsp split Black lentil/ Urad Dal

1/2 tsp Sesame seeds/ Til
1 Dry Red chilli/ Sukhi Lal Mirch
A pinch of Asafoetida/ Hing
2 tbsp Fresh Coconut/ Taaza Nariyal
1/2 tsp Salt/ Namak or as per taste
1 tsp Tamarind/ Imli

2/3 cup hot Water/ garam Pani or as required
2 tsp Jaggery powder/ Gud or as per taste

For Tadka:
1 tsp Oil/ Tel
1/4 tsp Mustard seeds/ Rai

2-3 Curry Leaves/ Kadipatta
A few Coriander Leaves/ Dhaniya Patta for garnishing (Optional)

For Ridge Gourd Peel Chutney/ Turai ke Chaal ki Chutney
Peel of 1 medium sized Ridge Gourd/ Turai (approx. 2 tbsp)
1 Green Chilli/ Hari Mirch or as per taste
1 tsp Oil/ Tel
2-3 tbsp
Fresh grated Coconut/ Taaza Nariyal
1 tbsp Coriander Leaves/ Dhaniya Patte

3-4 cloves of Garlic/ Lehsun
1/2 tsp Salt/ Namak or as per taste
1/2 tsp Sugar/ Cheeni or as per taste
2 tsp Lime Juice/ Nimbu ka ras

For Bottle Gourd Peel Chutney/ Lauki ke Chaal ki Chutney:
Grated peel of large1 Bottle Gourd/ Ek badi Lauki ki chaal
1 tsp Oil/ Tel
1 Green Chilli/ Hari Mirch or as per taste
1/4 tsp Turmeric powder/ Haldi
1 tsp Sesame seeds/ Til
2-3 tsp coarsely ground Peanuts/ Mungfali ke daane
1/2 tsp Salt/ Namak or as per taste

For Snake Gourd Seeds Chutney/ Padwal (Chichinda) ke Beej ki Chutney:
4 tsp Snake Gourd seeds/ Padwal (Chichinda) ke beej
1 tsp Oil/ Tel
1 Green Chilli/ Hari Mirch or as per taste
1/2 tsp Sesame seeds/ Til
1 tsp Peanuts/ Mungfali ke daane

5 tsp Fresh grated Coconut/ Taaza Nariyal
2 tsp Lime juice/ Nimbu ka ras
1/2 tsp Salt/ Namak or as per taste
1/2 tsp Sugar/ Cheeni or as per taste
