Bharwa Baingan is known as Bharli Vangi in Maharashtra. It means stuffed brinjal/ eggplant curry. I have taken this recipe from my mother. I happen to love it and hope that you all will also like it 🙂

INGREDIENTS:
10-12 Brinjals/ Baingan
4 tbsp Oil
3 medium sized Onions chopped
6-7 peeled garlic cloves + 10-12 slices of dry coconut crushed in a mortar & pestle
2 tbsp Maharashtrian Kala Masala Tikhat (Mix masala)
1 tbsp Coriander powder
1 tsp Cumin powder
1/2 tsp turmeric powder
1/4 tsp asafoetida/ hing
1/2 tbsp salt or as per taste
1/2 tsp Mustard seeds/ Rai
1/2 tsp Cumin seeds/ Jeera
8-10 Curry leaves
3 cups of Water
A few coriander leaves
