Ingredients and detailed recipes:

Ingredients for Baingan ka Bharta
Approx 750 grams Brinjals/ Baingan
2 medium sized Onions/ Pyaaz
4-5 tsp Maharashtrian Kala Masala Tikhat or as per taste
A pinch of Asafoetida/ Hing
Oil/ Tel
Salt/ Namak as per taste
Chopped Coriander/ Dhaniya

Recipe for Baingan ka Bharta
1. Slightly peel the stems adjoining the brinjals. This will ensure that the brinjals get cooked properly near the stem.
2. Apply some oil on the brinjals. This helps in peeling them easily on getting roasted.
3. Puncture the brinjals (make holes) with the help of a knife etc. This will ensure that they get well cooked and won’t burst open due to the steam trapped inside.
4. Put the brinjals in the fire below the chulha.
5. Once they are soft and well roasted, take them out with the help of a stick.
6. Let them cool down before peeling them.
7. Peel the brinjals and clean them by cutting them open in parts as shown in the video. Discard the parts of the brinjals that might have worms.
8. Heat 4-5 tbsp oil in the tawa/ kadhai.
9. Fry chopped onion till it becomes translucent. We don’t need to cook it till it turns brown.
10. Remove the fried onion from the tawa/ kadhai.
11. Add Maharashtrian kala masala tikhat, asafoetida (Hing), chopped coriander, mashed brinjals and salt to taste.
12. Mix everything together, Delicious Baingan Bharta is ready!

Ingredients for Bajre ki Roti
Bajra flour/ Bajriche Peeth
Water/ Meeth

Recipe for Bajre ki Roti
1. Sift the Bajra flour to remove the large Bajra pieces if any.
2. Add water as required and knead in parts. Do not add water to all the flour at once. Prepare the dough to make 2 rotis at once.
3. Pat the dough to make the rotis as shown in the video.
4. Put them on tawa upside down and apply some water on top as shown in the video.
5. Flip and cook well on both the sides.
6. Once the roti is cooked 60-70%, remove it from the tawa and place near the chulha so that its edges get well cooked. Keep rotating it while being placed near the chulha so that it gets well cooked from all the sides.
7. Remove and keep aside in a plate.
8. Apply ghee or home made butter (optional).

Ingredients for Thecha
Green chillies/ Hari mirchi
Oil/ Tel
Salt/ Meeth

Recipe for Thecha
1. Wash the green chillies, remove the stems and break them into halves.
2. Heat oil in the tawa.
3. Fry the green chillies in oil for about half a minute.
4. Remove the green chillies from the tawa.
5. Add salt and crush the green chillies as shown in the video to make Thecha.

Delicious Baingan ka Bharta, Bajra Roti and Thecha are ready!
