Ingredients –
For Chutney –
1 tsp Oil
6 garlic cloves
1 inch ginger
1 sliced onions
3-4 dry red chilis
1/4 cup Roasted chana
1 chopped tomato
1/2 tsp Salt
1 tsp oil for tempering
1 tsp Mustard seeds
Few fresh curry leaves
For vada –
1 cup chana dal (soaked for 8 hours)
1 cup finely chopped onions
2 chopped green chilis
1 inch finely chopped ginger
1 tbsp chopped curry leaves
1/2 cup Fresh coriander
1/4 cup rice flour
1 tsp black pepper powder
1 tsp Salt
Method –
For chutney heat a spoon oil in a pan, add garlic cloves, ginger and onions, cook for a minute.
Add dry red chilis, roasted chana, tomato, salt and cook for a minute. Add salt, 1/2 cup of water and allow to soft all ingredients on low flame.
Switch off the flame and let it cool. Transfer in a mixer jar, add 1/2 cup of water and grind in a smooth paste.
For tempering – heat a spoon oil, crackle mustard seeds, add curry leaves. Pour over the chutney, give a good mix. Chutney is ready keep aside.
For vada, remove all water from soaked chana dal. Preserve 2 handful soaked chana dal for later use.
Rest soaked chana dal transfer in a mixer jar and grind coarsely. Transfer dal paste in a mixing bowl.
Add onions, green chilis, fresh coriander, ginger, salt, black pepper powder, curry leaves, rice flour and mix gently. Take a handful mixture and prepare a ball and press in palm and make vadas in the same way.
Fry in hot oil on medium flame. Take out and enjoy with chutney.
