Ingredients –
500gram Bharta baingan
2-3 medium size tomatoes
2 onions
1 garlic bulb
3 green chilis
Method –
Wash brinjals and make 4 slits in brinjals. Do same with tomatoes and onions.
Now grease a iron wok with oil and also grease brinjal, tomatoes, onion, green chilis with mustard oil. Place all the vegetables in greased wok, cover and letthem roast on low flame for 8-10 minutes, meanwhile flip them and also take them out which are getting roasted, like green chilis, tomatoes, onions and garlic bulb. Brinjals will take more 5-6 minute to roast, flip them and let them roast.
Meanwhile peal all the other vegetables and chop them with knife or any chopper. Now take out roasted brinjal from the wok and peel them, remove the seeds if there any. Chop roasted and peeled brinjal with the help of knife. Keep aside.
Heat 2 tbsp mustard oil in the same wok. Crackle cumin seeds, onion seeds. Add all chopped vegetables (except brinjal). Add 1 tbsp red chili powder, 1/2 tsp turmeric powder, 1 tsp coriander powder, 1tsp salt and cook for few seconds. Add roasted and chopped brinjal, garam masala, fresh coriander and mix, cook for 2 minutes. Serve hot with roti, chapatti or paratha.
