Hey all, aaj hum bana rahe hai southindian most famous thatte idli. ise hum scratch se banayenge, how to make perfect idli batter at home with simple steps and ingredients. And also will share some basic tips for making this idli perfect and also we are going to share a famous podi masala which is also known as milagai podi / gun powder and for me it is a multipurpose masala or a chutney powder. It is very tasty with thatte idli, ghee and podi masala, so guys, do try it, if you are really a southindian food lover, just try it and do share your feedback with us. Happy cooking !! Ingredients –
3 Cups Rice
1 Cups Urad
1/2 Cup soaked sabudana
1/2 Cup soaked poha
Method –
Wash dal and rice separately and soak them separately for 5-6 hours.
Drain out all water. Firstly add urad dal in mixer jar and grind in a smooth paste. Add water if required. Transfer in a big vessel. Now add soaked rice in mixer jar and grind in a smooth paste, transfer in the same vessel. Grind dal and rice in batches. Now add soaked sabudana and poha in mixer jar and make a fine paste.
Mix all in vessel and add water if required, Cover and keep on warm place for 8-10 hours or it depends on weather too. It will increase in volume.
Now add salt and mix nicely. Grease thatte idli plates with oil, place a banana leaf and pour fermented batter, now steam for 15-18 minutes on medium flame. If you don’t have thatte idli mould, you can use medium size flat round plates for it.
Now demould thatte idli plates and enjoy with gun podi and sambhar.
Gun powder
Ingredients –
15 Dry Kashmiri red chilis
1 tbsp Chana dal
1/4 cup urad dal
1 tbsp Sesame seeds
1 tsp cumin seeds
1 tsp fenugreek seeds
20-30 Fresh curry leaves
1 tbsp Coriander seeds
1 tsp whole black pepper corns
1 tsp Turmeric powder
1 tbsp Salt
1 tsp Hing
Method –
Heat a pan on low flame, add dry red chilis and roast for 2-3 minutes. Transfer in a plate, allow to cool and grind in a mixer jar. Keep aside.
Now add chana dal, urad and roast for a minute, add curry leaves and roast till they become crispy. Add sesame seeds, cumin seeds, fenugreek seeds, coriander seeds, black pepper corns, and roast for 2 minutes. Switch off the flame, add turmeric, hing and salt, mix and allow to cool. Add in the same mixer jar and grind in a fine powder. Our homemade gun podi is ready. Sprinkle on steamed idli, enjoy with desi ghee.
