Ingredients –
For puris –
1/2 cup Sooji
1 tbsp Maida
For pani –
1 tbsp Coriander seeds
1 tsp Cumin seeds
3 Red chilis
1/2 cup Fresh coriander
1/4 cup fresh mint leaves
2 green chilis
1 small piece of ginger
1/4 Cup Tamarind
1/4 Cup Jaggery
1 lemon
1 tsp salt
1 tsp Black salt
For stuffing –
3-4 boiled mashed potatoes
1/2 cup Boiled black chickpeas chana
2 tbsp Finely chopped onions
Fresh coriander
Salt
Red chili powder
Method –
Mix sooji and maida in a vessel, prepare a soft dough using water. Cover and keep aside for 10 minutes.
Now prepare small marble size balls from the dough. Roll them in small discs, roll them evenly, cover them with a wet cotton cloth.
Now heat oil in a wok, add puris in and fry on high flame, once they puffed, set flame on low and fry them till they become crispy and golden colour.
Take them out and fry all the puris in tha same way. Allow them to cool, Now you can store in an airtight container.
For pani – soak jaggery and tamarind in hot water and keep aside for 15 minutes. Mash and sieve the pulp and keep aside.
Add fresh coriander, mint leaves, green chilis, ginger and grind, make a paste, add lemon juice for making it fresh and green. Keep aside.
Now take a big bowl for pani, add tamarind and jaggery pulp, green chutney paste (preserve 1 tbsp for stuffing), add salt, black salt, ice cubes, chilled water, Mix and adjust salt and water according to your taste.
For stuffing, mix boiled potatoes, chana, onions, green chutney paste, red chili powder, salt, fresh coriander and mix.
Stuffing, pani and puris are ready, Stuff the stuffing in crispy puris, dip in water and enjoy homemade panipuri. Enjoy !!
