Ingredients –
1 liter full fat milk
½ cup / 100gram sugar
1 cup curd
Method –
Transfer 1 cup curd in a sive and keep aside for 30 minutes.
Take milk in a heavy bottomed wok, allow to boil. Cook on medium to high flame till reduce its own 2/3 quantity.
Now take a flat bottomed pan, add sugar and allow to cook on low flame, do not touch the sugar, when sugar starts melting, give a stir and let it melt properly till it become light golden brown in colour. Add 2-3 tbsp reduced milk in prepared caramel and mix carefully. After it add this caramel mixture in reduced milk. Mix nicely, add curd in this caramel milk and pour in a clay vessel or any type of vessel. Keep it on warm place for 8-10 hours.
After 10 hours keep in fridge for 2 hours. Enjoy this tasty Bengali mishit doi.
