Ingredients –
250gram besan
45gram 3 tbsp ghee
45 3tbsp ml milk
For roasting – 125-150ml ghee
For sugar syrup –
150gram sugar
Saffron strands
Cardamom powder
100 ml milk
Method –
Sieve besan. Add 45gram ghee in besan and mix nicely. Add 45ml milk and mix using your palm to make the mixture grainy. Now sieve the grainy besan with a big hole sieve. Add 125gram ghee and besan in a heavy bottomed wok. Roast on low flame for 15-20 minutes, till the besan roasts properly and the colour of besan changes into light brown. Gradually add 100 ml milk, mix and cook on low flame. It will make mohanthal grainy. Switch off the flame and keep aside.
Now place a sauce pan on a stove, add 150gram sugar and 100ml water. Prepare a sticky sugar syrup. Add saffron strands. Remove from the stove.
Now again keep roasted besan wok on the stove, flame should be on low, add cardamom powder, prepared sugar syrup and mix nicely. Transfer in a greased thali or plate, flatten it, apply silver edible varak on it and keep aside for 2-3 hours on room temperature.
Cut in square pieces and enjoy homemade mohanthal.
