Ingredients –
Prepared dough
For stuffing-
1 medium size radish
1 tbsp oil
1tsp jeera
1 chopped green chili
2 tbsp gram flour (besan)
1tsp fennel seeds
1tsp red chili powder
½ tsp turmeric powder
1 tsp salt
1/2 tsp garam masala
1 tsp aamchur powder
Fresh Coriander
Method – Peel and wash radish. Grate radish and squeeze the radish and take out all the juice. Collect the juice and prepare paratha dough using this fresh radish juice.
Heat oil in a wok, add jeera and fennel seeds, sauté, add green chilis cook for few seconds.
Add grated radish, red chili powder, turmeric powder, salt and cook it on medium flame, add gram flour and cook the mixture till it collects in the wok, add garam masala, aamchur powder, fresh coriander and mix. Switch off the flame and allow to cool the stuffing.
Take a big piece from the dough, make a ball, cover with dry flour. Roll in small and thick disc, place a ball of stuffing in the middle of the disc. Seal the ends properly. Cover with dry flour. Roll it gently with a rolling pin. Roast on a medium hot tawa from both sides. Apply oil and roast on medium to high flame, remove mooli paratha from the tawa and enjoy hot and spicy mooli paratha with chutney or ketchup.
