Ingredients –
1 – Instant green chili pickle –
7-8 green chilis
¼ tsp salt
½ tsp lemon juice
2 – Tadke wala dahi –
Ingredients –
1 cup fresh curd
1 tbsp oil
1/ 2 tsp cumin seeds
Dry red chilis
Fresh curry leaves
One small chopped onion
½ tsp red chili powder
¼ tsp turmeric powder
½ tsp coriander powder
1/2 tsp salt
¼ tsp garam masala
Fresh coriander
3 – Lachcha pyaj –
Ingredients –
2-3 medium size onion
Salt
Red chili powder
Chaat masala
Fresh coriander
Lemon juice
4 – Papad cone –
Ingredients –
2-4 papad
Chopped onion, tomatoes, green chilis
Fresh coriander
Salt
Red chili powder
Bhujiya / namkeen
Lemon juice
Method –
1 – For green chili pickle – roast green chilis on tawa till brown marks appear on chilis, remove from tawa, make slits in chilis, sprinkle salt and lemon juice and mix, serve with roti and paratha.
2 – For tadka dahi – Heat oil in a pan, crackle cumin seeds, add chopped onions, green chili, curry leaves and cook for a minute. Add red chili powder, turmeric powder, coriander powder, salt and mix, add 1 cup beaten curd and let it boil for few seconds. Switch off the flame and add fresh coriander. Enjoy it with roti, paratha or khichdi.
3 – For laccha pyaj salad – Cut thick slices of onions, take out the onion rings, add all spices, lemon juice and fresh coriander and mix nicely.
4 – For papad cone – Cut papad in halves, roast on tawa and immediate fold in a shape of cone. Prepare all the cones in the same way. Mix tomatoes, onion and fresh coriander, red chili powder, salt and bhujiya in a bowl. Fill this in roasted papad cone and serve immediately.
