Ingredients –
125 gram / 1 cup sesame seeds
100gram sugar
100gram jaggery
1/2 cup water
Method –
Dry roast sesame seeds in a pan for 2-3 minutes on medium flame. keep aside. we have to again warm sesame seeds.
Place wok on flame, add sugar, jaggery and water in wok. Allow to melt on high flame and prepare a thick syrup.
Now check the syrup, add some drops in water, if syrup get crispy, our sugar-jaggery syrup is ready.
Switch off the flame. Transfer the syrup in a greased plate.
Stir with a spatula and allow to cool.
Transfer it in another greased plate.
Now stretch the syrup with hands. Be careful it is very hot. You can wear gloves during this step.
Spread some roasted sesame seeds on kitchen platform. (roast for a minute
again). Coat stretched sugar syrup in roasted sesame seeds. Fold and cover
nicely. Hit with a heavy object and fold it, till it becomes dry and crispy.
Now mark cut with a sharp knife. Keep aside for 10 minutes.
Homemade crispy gajak is ready. Store in an airtight container.
