Kon kahta hai veg biryani pulav jaisi hoti hai, isiliye aaj main layi hu perfect smokey paneer biryani with all important tips. is recipe se aap perfect biryani banakar enjoy kar sakte hai.

Ingredients –
250gram good quality basamati rice (basmati chawal)
1 bay leaf. 1 cinnamon stick, 1 star anis, 2 green cardamom,1 tsp salt
2 large thinly sliced onions
For gravy- 250gram cottage cheese (paneer cubes)
2 large finely chopped onions
2 large finely chopped tomatoes
2 tsp red chilli powder, 1/2 tsp turmeric powder, 1 tbsp Biryani Masala, 1 tsp
salt, 1 cup fresh curd, 1 bay leaf
For layering –
1/2 cup fresh and finely chopped mint leaves
1/2 cup fresh and finely chopped coriander leaves
few stands of saffron soaked in warm milk
2-3 tbsp pure ghee/ clarified butter
Method –
Fry sliced onion in hot oil on medium flame. Take them out and allow to cool.
Add water 3 times of rice in the vessel, allow to boil.
Add salt, bay leaf, cinnamon stick, star anise, green cardamom in boiling water. Add soaked rice and cook till rice is cooked 90%.
Immediately sieve boiled rice and spread them in a plate and allow to cool.
Take out extra oil from the wok in which we have fried onions.
Add chopped onions, bay leaf, ginger-garlic paste in hot oil. Cook on low flame till onion gets light brown.
Add red chilly powder, turmeric powder, coriander powder, salt in onions and mix.
Add chopped tomatoes, cover and allow to cook on low flame till tomatoes get soft. You can add 2 tsp water.
Add curd and mix.
Add paneer cubes and mix.
Gravy, rice and fried onions are ready for paneer dum biryani.
Place a heavy bottom pan on stove, flame should be on low.
Place prepared 1/2 paneer gravy on the bottom of pan, spread evenly. Now place 1/2 quantity of boiled rice over paneer gravy. Sprinkle fried onions, mint and coriander leaves, 1 tbsp of ghee and soaked saffron. Repeat this process for one more time.
Cover with a lid and allow to cook on low flame for 6-7 minutes.
Switch off the flame, and open the lid.
Serve hot with raita, salad and papad.
