Ingredients –
For stuffing –
2tbsp yellow mirch powder
1tbsp Red chili powder
1/4 tsp Turmeric powder
1tsp garam masala
1 tsp fennel seeds
1 tsp coriander seeds
1 tsp Salt
1 tsp Black salt
1 tsp Aamchur masala
1tbsp oil
1 tsp cumin seeds
2 chopped green chilis
1 tbsp besan
2cups finely chopped onions
1 boiled and grated potatoes
1 tsp Sugar
For dough –
250 gram Maida
1 tsp Salt
60 ml oil
Method –
For stuffing add all dry spices in a mixer jar and grind them. Prepare a fine powder. Keep aside.
Heat a tbsp. oil in a wok, Add cumin seeds, green chilis, cook for a minutes. Add gram flour and roast for a minute, add ground spices and roast for a minute. Add chopped onions, grated potato and cook for 4-5 minutes on low flame. Switch off the flame and allow to cool.
For dough mix maida and salt, add oil and mix. Prepare a soft dough using water. Knead the dough for 4-5 minutes and make it smooth.
Prepare small balls from the dough, flatten with hands, stuff 1 tbsp stuffing in the ball and cover it nicely, Now flatten it with the back of palm. Prepare all the kachoris in the same way and cover them with a muslin cloth.
Heat oil on high flame and fry kachoris for 10-20 seconds on high flame, take them out immediately. Now let them allow to cool and oil also. Again fry kachoris in medium hot oil on low flame. Flip them and fry them till they become golden brown in colour. Take them out from oil and enjoy them with
chutney.
