Ingredients –
For dough –
1/2 bunch of spinach
1.5 cup whole wheat flour
1/2 tsp salt
2 tsp Ghee / oil
For stuffing –
200 gram paneer
1 tsp red chili flax
1/2 tsp black pepper powder
1/2 tsp Salt
1/2 cup Fresh coriander
Method –
Boil water and switch off the flame. Add spinach in hot water, cover and keep aside for 10 minutes.
After 10 minutes, take out spinach from the hot water and add in chilled water.
Take out spinach from the chilled water. Add blanched spinach in a mixer jar and grind, prepare a smooth puree.
Take whole wheat flour in a vessel, add salt and mix. Prepare a soft dough using spinach puree.
Cover and keep aside for 5 minutes. After 5 minutes, add ghee and knead the dough and make the dough smooth.
For stuffing, grate paneer, add salt, black pepper powder, red chili flax, fresh coriander and mix nicely. Prepare 4 balls from the dough.
Now prepare a ball from the spinach dough and cover with dry flour. Roll and make a thick and small disc. Place a stuffing ball in the centre of the disc, cover the stuffing with dough and seal it nicely. Dust with dry flour and gently roll with a rolling pin and prepare a thick disc.
Place the stuffed paratha on a medium hot tawa, roast from both sides, apply oil and roast the paratha till brown marks appear.
Remove palak paneer paratha from the tawa and our healthy and tasty stuffed palak paratha is ready.
