Ingredients –
250gram Bitter gourd
1 onion
3 tomatoes
5-6 cashews
1 inch chopped ginger
5-6 garlic cloves
4 dry red chilis
1 tbsp red chili powder
1 tbsp coriander powder
1/4 tsp turmeric powder
1 tsp salt
1 tsp sugar
1/4 cup oil
1/4 cup fresh cream
Fresh coriander
Method –
Boil water, mix 1 tsp salt, 1 tsp sugar. Add bitter gourd, tomatoes, cashews, ginger, garlic, red chilis and boil for 5-6 minutes on high flame.
Switch off the flame, sieve all the boiled ingredients, allow to cool. Slice the bitter gourd. Remove skin from the boiled tomatoes. Roughly chop tomatoes and onion. Add onion, tomatoes, cashews, garlic, ginger and red chilis in a mixer jar and prepare a fine paste.
Deep fry karela slices in hot oil on high flame for 2 minutes, take out fried karela slices and keep aside.
Heat 2 tbsp oil in a wok, add bay leaf, cinnamon stick. Add 1 finely chopped onion and roast on low flame till they become brown in colour. Add red chili powder, coriander powder, turmeric powder and mix. Add paste, salt and cook on low flame till the gravy thickens. Add fried karela in gravy, fresh cream and cook for 4-5 minutes. Switch off the flame, garnish with fresh coriander and serve hot.
