Murukku is a beloved South Indian snack known for its crispy texture and intricate spiral shape. The term “murukku” means “twisted” in Tamil, reflecting its characteristic form. Traditionally, murukku is made from a mixture of rice flour and urad dal (black gram) flour, seasoned with ingredients like sesame seeds, cumin seeds, and asafoetida. The dough is kneaded to a firm consistency, shaped into spirals using a murukku press, and deep-fried until golden brown. This snack holds a special place during South Indian festivals such as Diwali and Krishna Jayanthi, but it’s also enjoyed as a daily tea-time treat.

Ingredients
1 Cup urad dal
2 Cups Rice flour
3 tbsp Oil / Butter
1 tsp Salt
1 tbsp Black sesame seeds
1 tbsp White sesame seeds
1 tsp black pepper powder
Method –
Wash urad dal and transfer in a pressure cooker, add 2 cups water and take 4-5 whistles on medium flame. Allow to cool. Open the pressure cooker, allow to cool dal completely.
Transfer this dal in a mixer jar and make a fine paste.
Now take out dal paste in a vessel, add rice flour, salt, both type of sesame seeds, black pepper powder. Make a soft dough, add water if needed.
Take a sev maker, place a big whole sev plate, place it in a sev maker. Fill with prepared dough.
Pipe out on a greased plate and make murukku, gently seal the ends. Now flip it in medium hot oil and fry till it become crispy.
Take them out and allow to cool and store in an air tight container.
Enjoy homemade crispy southindian murukku.
