Ingredients
1 cup rice
1 tsp Salt
A pinch of baking soda
Method –
Wash rice with water, soak in water for 20-30 minutes.
Remove all the water from soaked rice. Transfer in a pressure cooker, add 3 cups of water, salt and cover the lid.
Take 2-3 whistles on medium flame. Switch off the flame. Allow to release the pressure.
Open the lid of pressure cooker, transfer the boiled rice in a vessel, mash them with a masher or any heavy object.
Add a pinch of baking soda and mix. Take a sev maker and place a medium hole disc. Fill the sev maker with prepared rice dough. Cover and pipe out on a food grade plastic sheet. Allow them under the sunlight or fan for 2-3 days.
After 2-3 days, collect the dries rice sev and store in a container. Fry them in hot oil on high flame when you want to eat them.
