Sohan Halwa
Ingredients –
2 tbsp sohan halwa special aata (recipe is shown in the video)
4 tbsp maida
20 tbsp sugar
375gram desi ghee
750ml water
Method –
Take 100g wheat, clean and wash them with water, soak in water for 36 hours, after 36 hours remove all the water, wrap in a thick and wet cloth. Keep in dark place for 18-24 hours. Sprinkle water over the cloth after 6-7 hours, so that wheat stays moist. After 24 hours, open the cloth, wheat sprouts are ready, sun dry them for 2-3 days. After drying grind, them, in a mixer jar and prepare a fine powder, sieve and our homemade sohan halwa special aata is ready.
Take 2 tbsp sohan halwa aata and add it in a big, heavy bottomed wok. Add maida, water and mix nicely. Keep on high flame and cook on high flame till it boils nicely. Add sugar and mix, boil on high flame till mixture boils nicely. Stir continuously. Add 250-gram ghee and mix, cook on high flame, stir continuously. Cook it till the mixture thickens, add left over 125gram ghee in mixture and cook for more minutes, when mixture starts leaving the ghee, cook on medium flame till it becomes light brown in colour. Now fill this mixture in moulds, rings or in plates. Keep aside for one hours, after one hour, demould the sohan halwa from the moulds, rings or plates. Enjoy homemade sohan halwa.
