Madras Cucumbar Sambar – Southekayi Sambar

Mangalore southekayi huli or sambar is a specialty from the Mangalore, Malnad and Udupi regions of Karnataka. It is served with rice for lunch or dinner.

Ingredients – ಸಾಮಗ್ರಿಗಳು – सामग्रियां :

Urad Dal – ಉದ್ದಿನ ಬೇಳೆ – उड़द दाल – 3 tbs
Fenugreek Seeds – ಮೆಂತ್ಯ ಕಾಳು – मेथी – 1 tbs
Black Pepper – ಕರಿಮೆಣಸು – काली मिर्च – 1 tbs
Cumin Seeds – ಜೀರಿಗೆ – जीरा – 2 tbs
Coriander Seeds – ಕೊತ್ತಂಬರಿ ಕಾಳು – धनिया के बीज – 3 tbs
Oil – ಎಣ್ಣೆ – तेल – 4 tbs
Dried Red Chili – ಒಣ ಮೆಣಸಿನಕಾಯಿ – सूखे लाल मिर्च – 9
Fresh Coconut – ಹಸಿ ತೆಂಗಿನಕಾಯಿ – काटा हुआ नारियल – 1/2 cup
Madras Cucumber – ಮಂಗಳೂರು ಸೌತೆ – मद्रास कुकुम्बर – 1, chopped
Jaggery – ಬೆಲ್ಲ – गुड़ – 4 tbs
Turmeric Powder – ಅರಿಶಿನ ಪುಡಿ – हल्दी – 1/2 tbs
Tamarind Extract – ಹುಣಿಸೇಹಣ್ಣಿನ ರಸ – इमली का रस – 1/2 cup
Salt – ಉಪ್ಪು – नमक – to taste
Boiled Toor Dal – ಬೇಯಿಸಿದ ತೊಗರಿ ಬೇಳೆ – उबला हुआ तूर दाल – 1 cup
Mustard Seeds – ಸಾಸಿವೆ – सरसों के बीज – 1 tbs
Asafoetida – ಹಿಂಗ್ – हींग – 1 pinch
Curry Leaves – ಕರಿಬೇವು – करी पत्ता – 2 tbs
