1 cup = 250 ml; Tbsp. = Tablespoon = 15 ml; tsp. = teaspoon = 5 ml
Ingredients:
800g Chicken
4 ½” Cinnamon Stick
1 ½ tsp. Chilli Powder
½ Tbsp. Garam Masala
½ tsp. Shah Jeera [Black Cumin Seeds]
9 Green Cardamoms
9 Cloves
1 ½ cups Basmati Rice
1 ½ cups Onion
½ cup Yogurt
6 Tbsp. Coriander Leaves
10 Cashew Nuts
1 Tbsp. Ginger / Garlic Paste
½ Tbsp. Ghee [Clarified Butter]
Yellow Food Colour (few drops)
Cooking Oil
Salt to Taste

Serves: 4 -5
Preparation Time: 60 mins

  • You deserve and get a 10 out of 10 for the effort, presentation and the courage to cook this dish. Certainly aint as easy as it looks and considering that almost everyone has their own favourite Biryani and a preferential region to identify, all the more of a challenge to either create their own masterpiece or recreate the original. Perhaps the evolved nature of this dish now gives us such scrumptious flavours ranging from the subtle but highly recommended Biryani of Cochin to the to die for Hyderabadi version (the blessed thing haunts and tantalizes) and of course the light versions which hail from the North of India and Kolkata ( yes Kolkata too ). The very diversity has prompted reams of papers in an array of books which wont wither away soon. That said, this longish post is an ode to a dish whose ancestry and it's offspring have been liberal with its interpretations. A rare complete meal by itself. All happens to be great in my Biryani world, a dish I truly wish well, a food choice where when cooked right, you will rarely go wrong……and then comes Fatima with her wondrous creation. Though I haven't tried it yet, the video has reminded me ( yet again!) of the dexterity with which we move our masalas and create our own ; processes, style, methods, recipes et all. Though this version is identifiable with the "non kacchi " ( cooked meat) type of biryani, permit me to say that the fullness of flavour and the density of the spices would indeed make it memorable. Will try it for sure. So long…Keep us longing…yeh dil maange more. You can't imagine how hungersome it can be to think and write about ones favourite dish and without whetting up an appetite. La Isla Bonita by Alize is a good distraction NOW….
