INGREDIENTS: Beef Undercut: 1 kg. (If undercut is not available then 2nd preference is Beef leg “Knuckle” 95%-100 % lean. 3rd option is Goat/Lamb leg. only red meat, no white or yellow mussels, no fat.
TRADITIONAL RECIPE
Ginger Paste: 1 Tbsp Full
Garlic Paste: 1 Tbsp
Raw/Ripe Papaya Paste: 2 tbsp
Ghee/Oil: 3Tbsp
Lemon Juice: 3Tbsp
Red chili powder: 1.5 Tbsp
Salt: 1 Tbsp or to taste.
Turmeric: 1 Tea Spoon
Basic Garam Masalah: 1 Tbsp
Coriander Powder: 1/2 Tbsp
Cumin Powder: 1 Tea Spoon
Kabab Chini Powder: 1/4 Tea Spoon
Jyfal Powder: 1/2 Tea spoon
Javetri Powder: 1/2 Tea Spoon
ADDITIONAL GREEN MASALAH FOR EXTRA TASTE:
Green Chili: 2 Big
Hara Dhanya(Cilantro): 5 Tbsp of Leaves
Green Mint Leaves: 3 Tbsp
Yogurt: 3 Tbsp
Crushed Pepper: 3/4 Tbsp
GHEE/OIL for glaze: 1/2 cup

Do you marinade the meat in the Papaya Paste first and then add the spice mix or do you marinade everything together?
If the 'optional' Green Masala Paste is used – is this added to the marination or mixed later (just before cooking)?
