2 GOAT LEGS: 1 KG EACH WITH FAT.
INGREDIENTS FOR RUBBING
Salt: 2 tbsp or to taste
Crushed Pepper: 3 Tbsp or to taste.
Crushed Black Pepper: 1.5 tbsp
Meat Tenderizer: 2 tbsp
Oil: 4 tbsp
Ginger Paste: 1.5 tbsp
Garlic Paste: 1.5 Tbsp
Lemon Juice: 4 tbsp
SAJJI CHAAT MASALAH:
Salt: 3/4 to 1 tbsp
Amchur Powder: 1 Tbsp
Black salt Powder: 3/4 to 1 tbsp
Black pepper whole: 1/2 Tbsp
Black cardamom seed: 1/2 Tea spoon.
Cloves: 8
Ajwain: 1/2 Tea spoon
White Cumin seed: 1 tbsp
Coriander seed: 3/4 tbsp
Saunf whole: 1 Tbsp
Citric acid: 1/4 Tea spoon.
Heeng: 1/4 Tea spoon

Light Roast all whole spices on a fry pan. as soon as aroma comes. remove from fry pan and grind very fine. Mix heeng, salt and black salt.

    I'm trying this recipe today but I couldn't get citric acid from anywhere so can I use tartri instead or anything else in sajji chaat masala? If yes then also tell the quantity.

    Bhai can you please research and find the recipe of Authentic "Motton Dhanda Biryani(Zafrani). I try it I got the exact flavor but my rice get too soggy.
    Coz i cook like biryani .. I think it should cook like pilao..I am not sure.
