Tbsp: Table Spoon, Tsp: Tea Spoon, 1 cup: 235 to 250 ml (MEASURING)
Mutton: 1 ½ Kg (leg Meat Preferred)
Rice: Extra Long grain Aged Basmati Rice: 1 Kg
STEP 1=YAKHNI INGREDIENTS: {FINAL YAKHNI SHOULD BE 1 Liter}
Yellow Onion Peeled Whole: 2 medium
Garlic Bulbs: 2 Whole unpeeled
Ginger Peeled sliced : 50 gm
Whole Red Chili round: 20
Curry Leaves: 15
Salt: 3 Tbsp
Coriander seed: 5 Tbsp
Fennel seeds: 4 Tbsp
Black Pepper: 1 Tbsp
Cloves; ½ tbsp
Black Cardamom: 5
Green Cardamom: 15
Cinnamon Stick: 3 of 2 Inch
Star Anise: 3
Bay Leaves: Tez Patta: 5
Water: 6 Glasses
INGREDIENDS FOR MASALA
GHEE/OIL: 1 Cup
Onion Sliced: 300 gm
Yogurt: 1 Cup
Milk: 1 Cup
Ginger Paste: 3 tbsp
Garlic Paste: 3 Tbsp
Garam masala powder: 1 Tbsp
Fennel Powder: 3 Tbsp
Cumin Powder: 1 Tbsp
Green Cardamom powder: ½ tbsp
Jyfal Powder: ¼ Tbsp
Javetri Powder: ¼ Tbsp
Green Cardamom: 10
Black Cardamom: 3
Cloves: 15
Tez Patta (Bay Leaves): 3
Cinnamon stick: 3 of 1 Inch
STEP 3 DUM LAGANA
GHEE/OIL; 1 Cup
Onion: ½ medium sliced
Kewda Water: 5 Tbsp
Zaafraan (Saffron): 2 Pinch
Orange Food Color: ½ Tsp

  • sir in 1st phase ur onion was burnt,what
    was the sense puting milk and curd together ,milk becomes dahi after mixing togather.milk should be put at the end after reducing it half before putting it dum .Onion should be browned togather then seprated for meat and garnish ing.pl comment although im novice in cooking
