Mughlai Zafrani Garam Masala: ½ Tbsp

Please advise!
It is my understanding that if one kneads the meat too long, the proteins break and the texture of the meat balls will be on the rubbery side. Is this the case? what steps are necessary to ensure that the meat balls are soft?

Alternatively one can use Green Masala and Coconut milk for making Curry.
Over and above your Masala ingredients, I use 1, Fennel seed, 2. Poppy seeds 3. Dedicated coconut (saute). From our guest visiting in USA when we set for Dinner by fragrance she
