INGREDIENTS:
Mutton: 1 kg
Yogurt: 2 cups
Oil/Ghee: 1/2 cups (For Cooking) + 1/2 Cups(For Ratanjot Infusion)
SPICES for MARINATION:
Salt: 1 TSP
Kashmiri Red Chili powder: 1 Tbsp
Fennel Powder: 1 Tbsp
Black pepper Powder: 1 TSP
Cloves Powder: 1/4 TSP
Cinnamon Powder: 1/2 TSP
Black Cardamom Powder: 1/2 Tsp
Green cardamom powder: 1/2 Tsp
COOKING SPICES:
Salt: 1 Tbsp or to taste
Kasmiri Red Chili Powder: 1 Tbsp
Asafoetida Powder: 1 Tsp
Dry Ginger Powder: 1 TBSP
Garlic Powder: 1 TSP (Optional, not the part of Pundit style)
WHOLE SPICES:
Black Pepper: 1/2 Tbsp
Cloves: 1 Tsp
Green Cardamom: 12
Black Cardamom: 4
Cinnamon Stick: 3 of 1″
Bay Leaves: 2
Fennel Seeds: 1 Tbsp
OIL INFUSION:
Hot Oil: 1/2 cups
Ratanjot: 1/4 Tsp or 1 Tsp Red Kashmiri Chili Powder

hi, though the ingredients used are somewhat correct ,garlic is not used in pandit style of cooking. The order of using the ingredients also varies. it goes like this — Ghee- whole Garam Masala – hing – meat – cook dry – add curd -cook till the curd splits and covers the meat – then the rest of the procedures. This i learnt from a kashmiri pandit ….
Sir, apko saalo se follow karti aa rahi hu, lekin yeh recipe aaj pehle dafa try kiya. Mashallah, bahut unda bani hai. Intehayi lazeez aur behtareen khushbu. Here in Toronto area we are fortunate. we get ratan joth and red chillies from Chinese stores good for intense red color.
Garlic powder, I think it's ur version. I got this recipe from many Kashmiri ppl and almost everybody uses mustard oil and no one uses garlic powder
Pahley minute main hi lagaya ja sakta hai ki yeh rawayati Kashmiri recipe nahin hai. Kashmiri roganjosh ( jaisa wazwan main pakta hai) main dahin NAHIN padta. Zara bhar bhi nahin.

Why do you need to add water? The Mutton will release the water while frying. Secondly, have you not used mustard oil? I think it is used in authentic dish.

I like your all recipes but I am my self Kashmiri we never use garlic powder and hing and while making rogan gosh we never marinated meat and we never use curd for making Rojan josh u can call this recipe any thing but not rogan josh

Where in NJ do we get Rattanjot or mawaal powder ? In English it is called cockscumb flower … I tried looking for it 10 years back but could not find in any Indian store.

Par garlic powder shayad Kashmiri Pandit cusine ka hissa nahin hain. Aap ne ratanjyot ka zikr aur istamaal karke dil khush kar diya 🙂
