INGREDIENTS:
Peeled shredded carrots: 2 Kg
Regular Milk: 2 Lit
Desi Ghee (Clarified Butter): 200 gm
Sugar: 250 gm to 300 gm
Khoya: 300 gm
Green Cardamom Powder: 1 tbsp
Kewda water: 1 Tbsp
Almond: Peeled and sliced or chopped: 50 Gm
Pistachio: Chopped: 50 Gm
Raisins Green: 50 Gm
PROCEDURE:
In a cooking pot add milk and shredded carrots. Bring to boil. Add green cardamom powder. Mix very well. Reduce heat to 1/3 flame and cover the lid. Let carrots get tender in the milk. Stir occasionally to ovoid burning. About 3 to 40 minutes after when carrots get tendered completely, then increase the flame to high to burn the access milk. Stir occasionally to avoid burning. After 5 minutes of high flame add green raisins to the pot. mix very well. When all milk dries an a solid mixture of carrots and milk is remained, then add sugar and ghee. Mix very well and cook on high flame by continuous stirring with wooden spoon. When ghee is separated from carrots, add Khoya, Chopped almonds and pistachio and mix well. Add Kewda water to the halwa, mix and DUM on low flame by covering with lid. Dish out and garnish with, chopped pistachio, sliced almond and khoya. Enjoy the best Carrot Halwa in the world.
